Following five years of renovations, Dublin City’s Mercantile Hotel is ready to open its doors once again this May.
The new and improved hotel features over a hundred bedrooms and all the amenities: a bar, café.28, and restaurant run by and curated by head chef Stephen Gibson. Known for founding French restaurant Pichet and his “integral role” in Café en Seine, Gibson has over three decades of experience in the industry and plans to “bring his renowned passion to the new menus on offer at The Mercantile Hotel,” Drury PR director Grace Cooney said.
First opening in 1835, the Mercantile Hotel said that the newly enhanced hotel will generate at least 80 job opportunities in the city centre, Cooney said.
“The restoration and re-opening will bring many new hospitality jobs to the capital,” said Cooney, which aims to improve the Irish tourism sector as the Dame Street hotel has “been a landmark for locals and tourists alike for quite some time now.”
The company is “seeking dynamic and experienced leaders who are looking for the opportunity to make their mark in the Irish hospitality industry and ensure the highest standards of hospitality are delivered.”
